Doorway arch

The Romans discovered that for a good draw the door of a bread oven should be 60-65% of the height of the main oven. Clever chaps – flushing loos too!

So we butchered our lovely former to make it shorter and repeated the process of making an arch at base height, again using heat resistant mortar and our prettiest clay bricks.

You’ll notice there’s a gap at the top – we are going to brick in to allow a flue to happen!

We then used the former to cut a wood door from a thick piece of wood that will be soaked before each use.

If you are following this guide – have you checked your peel will fit through the door – a 30cm wide one will be fine!
