FarinataFarinata is fantastic Ligurian street food cooked in a pizza oven! In Tuscany it is often called “Cecina” (made of Chickpeas).
It is basically a chickpea flour pancake made with Chickpea flour (Gram flour from an Indian supermarket!), olive oil and water.
Here’s the recipe we use
2/3rd cup of chickpea flour
4 tablespoons of extra virgin olive oil
1 teaspoon salt
1 teaspoon ground pepper
3/4 cup of water
Gradually add the water to the flour, mixing as you go. Leave to rest for a few hours.
Scrape off any foam on the surface
Add the olive oil and stir well.
Pour into a well oiled pizza dish until 1/8″ thick and put in the well heated pizza oven until it is a a golden colour.
Eat while hot!
